This has been a journey about chasing the dream of entrepreneurship through working with a passion, crystallised into new opportunities, within the city of Copenhagen. Driven by the vision of helping to foster a thriving food truck culture, in Copenhagen, I have been working as a first mover in the field of offering street food and food trucks.

Through my research into the field, I have explored the best practises in the concept development of food trucks and identified what elements need to be present, in a city, for this way of trading to be successful. This industry is about offering complex food experiences on the streets, presenting gourmet food in fast food style. The food truck trend is slowly developing in Copenhagen, and I am ready to jump along, once the timing is perfect. Through my prototyping and development of a Danish-Ethnic street food concept, I have all the elements in place, which need to come together in order to successfully a creation a real truck.
Furthermore, I am mobilising a business that will host street food markets, around Copenhagen, functioning as a show room for already-established traders, as well as an incubator for new food entrepreneurs to enter the market.

I share my final report and other research into the field on www.kbh-foodtruck.dk
